California Pizza Kitchen for Veggies

I’m sure our savvy-er readers will already know this but California Pizza Kitchen has quite a few vegetarian options on their menu.  They are also extremely family friendly and won’t break the bank.

My favorite part is that they have this little menu with “smaller” portions at a lower cost.  You can get two small portions meals for about $9 (which helps you not have to choose just one item)!

I had the Grilled Vegetable Sandwich and Tortilla soup- which was amazing.  The sandwich was not my absolute favorite; I thought it could be a little more flavorful but it was still really good and tastes great reheated in the oven.  Afterwards we shared the buttercake which had: a layer of sugar crystals on the bottom, the buttercake and then a layer of cheesecake which was topped off with a scoop of ice cream.  Delicious and perfect for a table of four to share and not feel guilty (starting to really love sharing deserts!).

I am really looking forward to trying some more fare at CPK soon!

My Biggest Weakness- Italy Today

If you were to ask me today what my absolute favorite meal would be, I would have to say the Greek Salad Pizza at Italy Today in Miami Lakes.  It’s like Kryptonite to Superman, I seriously get weak in the knees when I think about this pizza.

I’m sure it’s not the least caloric food in the world but just look at that healthy greek salad on top of the whole wheat crust, sprinkled with olive oil and crumbles of Mozzarella.  Is your mouth watering yet?  How about calamata olives and onions and diced tomatoes thrown in?  On top of that, if you go for the lunch special it’s only $7.50 including a drink (be aware that this is only for sit-in, if you order take out they charge you $10 for just the pizza, not including the drink). This pizza is so simple you could probably make it vegan at home with some sprouted grain tortillas (Ash’s suggestion) and vegan cheeze (especially since I’m TRYING to go dairy free).
The only negative of Italy Today is that the service is not always the friendliest, they don’t always greet you with a smile but the food is still worth it.  Our waitress today was actually really sweet, a couple of months ago it was a gentlemen that could have cared less we were in his section.  He obviously didn’t care about tips and I made sure mine wasn’t memorable (in a good way anyway).

Overall, I should say they get 4 carrots because of the touch and go service but the pizza is so amazing, I’m basing it on the pizza alone.  5 Carrots!

Pizza Cravings…

Hi all you crazy veggie people! It’s Jess, I have been craving pizza the last few weeks. I did give in to a Amy’s pizza this weekend but our store doesn’t have the Amy’s with vegan cheese yet so I kind of cheated.

Anyway, I love the sprouted wheat tortillas so made up my own very simple recipe-

Sprouted wheat tortillas get hard quickly so make sure the cheese is not super cold when you make this.

Ingredients:

Organic Tomato Sauce plain (if you live in Miami, you can find this at Publix but I’m sure Whole Foods carries it too and it’s like .79 cents a can)
Ezekiel 4:9 Sprouted Wheat tortillas
Daiya Cheese (melts soooo good)
Oregano, Sea Salt and pepper
1 Sausage link from Tofurky (I just learned that Tofurky actually makes their own pizzas! wow!)
1 tsp Olive oil
Green/black Olives

Directions:

Season the tomato sauce with the oregano, salt and pepper.
Spread a thin layer of olive oil on top of the sprouted grain tortilla and then spread the sauce on top.  Cut the olives in half and sprinkle on top.
Grill the cut-up tofurky sausage ahead of time till it’s nice and crispy and then place on top of the tomato sauce.  On top of that, place the daiya cheese.
Put in the oven on low heat so you don’t make the tortilla too hard (they get toasted fast so be careful)
Eat & enjoy – less fat, better for you!
You can put any topping you want but remember that you’re not heating for too long so don’t put anything on top that needs to be cooked- onions could be grilled with the tofurky sausage if you like them but do it ahead of time otherwise they will be crispy and too fresh (unless you like that sort of thing).
