It’s Hello Fresh For Dinner…. Again

I’m a sucker for a good deal and every single time that Hello Fresh sends me their little coupons for 50% off, I jump on it (even full price, these meals are worth it!).  I received the package of 3 vegetarian meals on Thursday afternoon and have made the Tuscan Ribollita and Curried Thai Rice Bowl, both delicious!  These boxes make me feel like a fabulous chef and even though my husband doesn’t relish the taste of Thai food (in fact he refuses to eat Thai), he asked me to pack what was left for lunch.  Too late! I packed it for myself.

The Tuscan Ribollita was a suprise to me.  I thought I was going to hate it because it seemed there were too many veggies and not even spices but it was absolute perfection when paired with the ciabatta bread croutons.  The perfect combination of savory and fresh.  I honestly wish I could have these boxes delivered to me every week because it makes things so much simpler and I always have leftovers in our three person household.

Supa Kitchen Vegetarian Meal Delivery in Broward

I have been getting a little pudgier than usual in the last few months.  I have fallen way off the deep end, even though I promised myself this year would be a healthier year.

Thank God for meal delivery because it really helps you to re-evaluate your portion sizes (it’s already done for you) and takes a lot of the guess work out of the whole meal prep ordeal.  I ordered for the second time from Supa Kitchen (and she was nice enough to include dinners as an added bonus this time!  One of the perks of blogging y’all) because I need to get back on track.  I was 10 lbs away from my absolute best weight in 15 years and then gained 8 more lbs!  How did I do that?  Why do we allow the self-sabotaging to even begin?

On my front door at 6:30am last Monday morning, was a meal bag with the next 3 days of meals.  Thursday morning, again, she delivered Thursday/Friday so everything was so fresh.  No frozen meals!!

Here is the breakdown by day:

Day 1: Lunch- Pita Pizza with Mushroom and spinach- I did get a little hungry after this one though it was probably close to 250-300 calories.  No more 600 calorie lunches for me!

Dinner- Cheesy Rice and “beans” (green beans) oh my goodness it was delicious!  Have to get that rice recipe.

Day 2: Lunch- Bean Burrito- a healthy take on the classic bean burrito.  No oozy gooey cheese here but fresh and clean and tasty. Making better choices for snacks today, feeling fairly good about myself!

Dinner- Eggplant Parmesan- dreaming about making my own meals next week.  Not sure I will be as happy with the taste as I am on these meals.  I think Kelsey should be teaching classes on how to prepare your food for the week.  I’m a total idiot when it comes to portion sizes and buying ahead.

Day 3: Lunch- Meatless Meatball stuffed zucchini- I loved this one!  Two zucchini boats with “meat” balls and a little cheese.  Every single meal leaves me feeling like I am healthy.  Lots of veggies and grains.

Dinner- Pesto Brown Rice- I have to admit, I had to add something to this meal because I felt like I needed a little more protein.  Still very tasty.

Day 4: Lunch- Apple Walnut and Cranberry salad with crumbled cheese.  Nice portioned salad and adding in a few garbanzo beans made it perfect!  It came with a raspberry dressing.

Dinner- Quinoa and Bean Chili with Pita chips- very tasty and filling.  I’ve made Quinoa chili before and it’s such a great healthy treat for winter or summer!

Day 5: Lunch- Meatless Tacos- I’ve been waiting all week for this one!! I could eat ten of these tacos and not blink (which is why I need to order meal services).  In fact, the portion was one tortilla and tons of “meat” so I used the extra “meat” and stuffed it into another tortilla I had at home because it was too good to pass up!

Dinner- Orange Glazed Chick Peas with Sesame Grilled Zucchini over Brown Rice.

I felt cleaner and healthier after the week was over.  I made better choices with my snacks once my body adjusted to eating a little better.  I could totally get used to eating this way on a regular basis, armed with some healthy snacks, this is perfect for the person who has no time to make their meals or isn’t the best at figuring out portion sizes!

A Vegetarian Review of Blue Apron Meal Delivery

With so Blue Apron Upcoming Menu View Onlinemany meal delivery services on the market today, it’s been hard to sift through them all to see which are really worth the price. It’s true, $60 for three meals for two isn’t cheap, but if you calculate it in comparison with ordering take out on busy evenings, this becomes much cheaper. Blue Apron is the first meal delivery service I’ve tried where you cook your own meals. I like the idea since I do love to cook, yet still giving me three nights off from meal planning. All of the meals are listed as two portions unless you purchase a larger package, however I’ve found that some of the meals do give me enough to feed three. Blue Apron will hold your credit card information on file and you choose which weeks you would like to receive the delivery. You enter into the site, go to the Delivery Schedule section and can choose to skip one or all of the upcoming deliveries. You have until one week prior to finalize your selections. This gives you enough time to review the upcoming menu and decide if you’d like it to be delivered. I’ve been a member of Blue Apron for a few months before I took the leap, as I just wasn’t sure if I’d like the concept. They did not ever charge me anything for any of my skipped weeks.Skip Meals on Blue Apron

There are not many ways that you can customize the menu, you choose if you are vegetarian (at this time there is no vegan option) or if you eat meat, pork or seafood. However you can review the menu before ordering for that week, so you are able to skip that delivery if there are ingredients you do not like or have allergies to. Jessica and I shared this delivery, she prepared the Summer Saute, while I prepared the Potato Rosti and the Quinoa Tabbouleh & Fairy Tale Eggplants. All the ingredients were easy to split between us, so this is an option to split with a friend or family member. The box arrives via courier with ice packs to maintain freshness. You will need to refrigerate the ingredients as soon as possible, but it does stay fresh for a few hours after delivery.

Blue Apron IngredientsAll of the ingredients will be labeled with what they are (i.e. carrot, eggplant, basil, spice mix) and some will be inside paper bags with the recipe label (i.e. summer saute). You will also receive three recipe cards that have pictures and legible, easy to follow, step-by-step directions on how to prepare each meal. You simply read the card, choose the ingredients needed for that recipe and follow the detailed instructions. The two meals I prepared, the Potato Rosti and the Quinoa Tabbouleh & Fairy Tale Eggplants, took less than 45 minutes each to prepare, and that was with photos and notes in between to make this review. I can easily say that each could take only 20-30 minutes from start to finish if I hadn’t stopped in between.

Blue Apron IngredientsThis is a great option on hectic nights, as usually it takes just as long to decide on a restaurant, order and pick up a take-out meal. The meals were very healthy, delicious and even my meat loving fiancé loved them, he especially liked the Potato Rosti. The Quinoa Tabbouleh & Fairy Tale Eggplants was only enough for two servings, however the Potato Rosti would have been enough for three to have a nice meal. Overall I think this is a great option for those hectic weeks where I know I’ll be tempted to order take-out or delivery. I loved that the ingredients are fresh, whole ingredients, which is a much healthier alternative to many hectic mid-week meals as well. With each meal averaging about 500 calories, I could definitely see this as an accompaniment to a weight loss plan. Thanks Blue Apron for letting us try out your service and I look forward to ordering again in the future!
