Accidentally Vegan Peanut Butter Cookies! ;)

I say accidentally because these became vegan when I realized I had no eggs or butter in the house.   Thank goodness for Chia Seeds and Vegetable oil!

I found this easy recipe for peanut butter cookies online.  I have modified it quite a bit so I’ll just add the link at the bottom in case you want to try it in it’s original version:

1/2 Cup Peanut Butter
1 C Brown Sugar
Chia Seed – 1/4 C water with teaspoon of chia (soaked)
1/2 C  Vegetable Oil
Pinch of baking Soda
Pinch of baking Powder
Pinch of Salt
1 Tsp. Vanilla
1 1/4 C. Flour
Chocolate Covered Cacao Nibs

Blend all your ingredients together (minus the Nibs).  The consistency should not be watery – it should be fairly firm.  Round out a teaspoon full into balls and place on oiled cookie sheet.  Once you have all the balls on the sheet, crosshatch with a fork on each cookie- it should end up looking like tic tac toe.  Then add you little “button” by pressing a CCCNib into the center- it adds a little umph to your cookie.

Place in the oven for about 20 minutes (check at around 12 minutes, each oven is different) at 325 degrees.

You don’t want these to get too brown or they will be hard.

The great thing that I found about these cookies is that the little chia seeds didn’t fully dissolve so it left it with a little crunch in each bite that I absolutely love!
